Rajmah Turkey Chili
• 1 lb ground turkey
(99% fat free)
• 1 package rajmah
• 1/3 cup olive oil
• 1/4 cup fresh ginger, chopped
• 3 cloves garlic, chopped
• 1 medium onion, chopped
• 1 can of diced tomatoes (14.5 oz)
• 1 can of red kidney beans, drained (30 oz)
• 1 green chili, chopped
• 1 can of tomato sauce

The rajmah reminded me of chili, but with an Indian kick. The problem was the vegetarian recipe wasn't filling for a gluttonous carnivore like myself.
So, I decided to try my own version and added some ground turkey. The result was terrific, and the dish definitely fills me up, and ends up providing left-overs for the next couple of days. Some of my ingredients are canned just to speed things up, but my recipe is:
Heat oil in a deep saucepan over medium heat for 1 minute. Add ginger, garlic, onion, and green chili, and let sizzle until onions turn golden. Add ground turkey, and heat until cooked through. Then follow the remaining cooking directions on the package. Enjoy!

Punjabi Chhole
• 1/4 cup extra virgin olive oil
• 1/4 cup chopped ginger
• 1/2 cup chopped onion
• 2 diced plum tomatoes
• 1/4 cup chopped cilantro
• 3 cups boiled chick peas or 30 oz. canned chick peas, drained and rinsed
• Chopped green chilies (optional)

Heat oil in a pan over medium heat for 1 minute.
Add ginger, ¼ cup chopped onions, 1 tomato,
green chili, and let simmer for 1 minute. Add
chick peas and stir constantly for 2-3 minutes.
Then, add Arora Creations Punjabi Chhole Spice
Blend and continue stirring for 2-3 minutes. Finally,
mix in remaining chopped onion and tomatoes, stir
evenly until desired texture and remove from heat.
Garnish with cilantro. Serve.
*For milder Chhole, use ½ of spice blend
to start, add more until desired taste.
**HINT: add ½ cup of water to mixture
for extra sauce.
We recommend Punjabi Chhole be served over hot
rice or with Indian bread. Complement each Arora
Creations dish with a serving of plain yogurt.

Gobi
• 1/4 cup extra virgin olive
oil
• 1/4 cup fresh sliced ginger
• 1/4 cup chopped green chili (optional)
• Two plum tomatoes (chopped)
• One cauliflower, cut into small flowerets
• 1/2 cup chopped cilantro
|
Heat oil in a large wok or pan over medium
heat for 1 minute. Add ginger, green chili, tomatoes,
and stir evenly for 1 minute. Then add Arora Creations
Gobi Spice Blend and stir evenly for and additional
2 minutes over medium heat. Now add cauliflower
and cook over medium heat for approximately 20
minutes while stirring occasionally. Remove from
heat and garnish with cilantro. Serve.
*Hint: add ½ cup of water to mixture for
extra sauce.
We recommend Gobi be served over hot rice or
with Indian bread. Complement each Arora Creations
dish with a serving of plain yogurt.

Tandoori
• One whole chicken (8 pieces) skin & fat removed
• 1/2 cup plain yogurt
• 1/2 cup extra virgin olive oil
• 1/2 cup vinegar
|
Combine oil, vinegar, and yogurt with Arora
Creations Tandoori Chicken Blend in a small bowl.
Make shallow slits into each chicken piece, dip
into marinade, and place into a separate bowl.
Pour the remaining marinade on the chicken, cover,
and refrigerate for 4 to 24 hours. Prepare the
chicken according to your preference knowing that
the authentic Indian flavor has been achieved.
We recommend Tandoori Chicken be served over
hot rice or with Indian bread. Complement each
Arora Creations dish with a serving of plain yogurt.

Rajmah (kidney beans)
• 1/3 cup extra virgin olive oil
• 1/4 cup chopped fresh ginger
• 1 finely chopped medium onion
• 1 plum tomato (diced)
• 3 cloves garlic (chopped)
• 1 large chopped green chili (optional)
• 1/2 cup chopped fresh cilantro
• 8 oz. can tomato sauce
• 3 cups boiled red kidney beans or 30 oz. can red kidney beans

Heat oil in a deep sauce pan over medium heat
for 1 minute. Add ginger, garlic, onion, green
chili, and let sizzle for 1 minute. Then add tomato
sauce and Arora Creations Rajmah Spice Blend.
Cook for an additional 5 minutes, stirring evenly.
Add 3 cups boiled red kidney beans with water
or canned red kidney beans (undrained) plus one
additional cup of water, and tomatoes. Now cover
the pan and bring to a boil. Reduce to medium
heat and let cook covered for 10 minutes. Remove
from heat. Garnish with cilantro. Serve.
We recommend Rajmah be served over hot rice or
with Indian bread. Complement each Arora Creations
dish with a serving of plaint yogurt.

Bhindi Masala
• 1lb. of either asparagus,
string beans, or okra rinsed and dried. Okra must
have edges trimmed and be sliced in half length
wise
• 1/2 cup extra virgin olive oil
• 1 small onion sliced
|
Heat oil over medium heat for 1 minute in a frying
pan. Add the green vegetable of your choice and
stir gently over medium heat for 5 minutes. Now
add Arora Creations Bhindi Masala blend, lower the
heat, and cook for and additional 6 minutes. Remove
greens from pan, leaving spiced oil. Add onions
and sauté over medium heat for 1 minute.
Return greens to pan and fold in gently with onions
for 1 minute. Remove from heat. Serve.
We recommend Bhindi Masala be served over hot
rice or with Indian bread. Complement each Arora
Creations dish with a serving of plain yogurt.

Goan Fish Curry
• 1-2 lbs FISH
(salmon, shrimp,
red snapper, tuna, etc.)
• 3/4 cup lemon juice
• 3/4 cup olive oil
|
Combine lemon, oil, and Arora Creations Goan
Fish Curry in a small bowl. Pour the marinade
over the fish or seafood of your choice, cover,
and refrigerate for 4 to 12 hours. We suggest
pan searing the fish, broiling in an oven, or
using the grill.
We recommend Goan Fish be served over hot rice
or with Indian bread. Complement each Arora Creations
dish with a serving of plain yogurt.

Chicken Tikka Masala
• 2 lbs boneless and skinless chicken cubes
• 3/4 cup olive oil
• 1 medium onion minced
• 1/2 cup minced ginger
• 4 cloves garlic minced
• 8 oz. can tomato sauce
• 1/2 cup chopped cilantro
|
Heat oil in sauce pan over medium heat for 1 minute.
Add onion, ginger, garlic, and cook until light
brown. Next add Arora Creations Chicken Tikka Masala
Spice Blend and stir constantly for 1-2 minutes.
Add tomato sauce and cook for 2-3 minutes. Add chicken
cubes and cook stirring frequently for 8-10 minutes.
Finally add ¾ cup water, stir once, cover
and cook for 8-10 minutes. Remove from heat and
garnish with cilantro. Serve.
We recommend Chicken Tikka be served over hot
rice or with Indian bread. Complement each Arora
